JUNE COOKIE OF THE MONTH: EASY CHOCOLATE CHIP-HAZELNUT COOKIE

This may be one of the easiest cookies you will make which means it’s the perfect recipe for your children to enjoy making.  Its vegan and gluten-free and no one will believe it!  The combination of the chocolate and hazelnuts gives the cookie a Nutella taste!  I think Nutella was a staple in every Italian home back in the day or maybe even now.   Who doesn’t love Nutella?

Preheat oven 350F

Mix together well hazelnut butter, vanilla and aquafaba.

Stir in rest of ingredients in order as listed.

Scoop 1 tablespoon or more of dough per cookie.

Place 1” apart on lined cookie sheet. Using the back of a spoon press dough down slightly.

Bake for 20 – 30 minutes or until edges are slightly browned.

Ingredients

Scale
  • 1 cup smooth dry-roasted hazelnut butter
  • 1 tsp pure vanilla extract
  • 6 tablespoons aquafaba
  • ½ cup organic brown sugar, packed
  • ½ teaspoon salt
  • ½ cup cassava flour (or any gluten-free flour)
  • ½ cup dairy-free chocolate chips
  • ½ cup raw hazelnuts, coarsely chopped

Instructions

  1. Preheat oven 350F
  2. Mix together well hazelnut butter, vanilla and aquafaba.
  3. Stir in rest of ingredients in order as listed.
  4. Scoop 1 tablespoon or more of dough per cookie.

Notes

Store in airtight container in fridge for 1 week or freeze for 2 months.
