CHICKPEA PATTIES

These chickpea patties are so quick and easy to make.  They are gluten free, vegan and can double as a burger or a a side  Make these patties ahead and have them ready to go for lunch or dinner!

Place rinsed and well dried chickpeas ( I towel dry them) in a bowl and mash with potato masher. 

Add all other ingredients into bowl and mix well. 

Shape into 3 inch patties.  Coat each patty with flour and place patties in freezer to firm up for 30 minutes.  

Heat oil with medium to high heat, place patties into pan and fry until golden brown on each side. 

Should make 7 – 8 patties. 

Top with grilled zucchini slices, vegan mayo or Happy House Special Sauce.  See my recipe for Happy House Special Sauce.

Description

These chickpea patties are so quick and easy to make.  They are gluten free and vegan and can double as a burger patty or as a side.  Make these patties ahead and have them ready to go for lunch or dinner!


Ingredients

Scale

2 cups of garbanzo beans (approximately  2398 ml cans)

2 celery stalks, finely chopped

2 tablespoons finely chopped Italian parsley

1/2 medium chopped yellow onion 

2  garlic cloves, crushed 

1 tsp sea salt

1/4 tsp black pepper

1/2 tsp smoked paprika

1/4 teaspoon chipotle powder (optional)

4 tablespoons flour (I used cassava flour) + more to coat patties 

1 flaxseed egg ( 1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 15 minutes). 

Avocado oil to pan fry

These patties can double as a burger or as a side.  


Notes

If using canned chickpeas as I did in this recipe, I recommend using the Yves or Eden canned brands as they have been pressure cooked in the can.

These patties can be frozen after cooked up to 2 months.
