SPLIT PEA SOUP

How many soups are not only delicious but almost effortless?  This is the one … no fuss here.  Throw all the ingredients into one pot and you will have one of quickest and most satisfying, soul-warming meals you have ever put together.  You can make it in the Instant Pot or on the stovetop.  Whichever you decide, you will not be disappointed.

Instant Pot version:  Place all the ingredients in the Instant Pot.  Stir well.

Using the manual button set for 30 minutes.  Use the quick release when done.

Using hand-held immersion blender, blend soup until you achieve the consistency you like.  I prefer some chunks to my soup.  Allow soup sit for approximately 20 – 30 minutes before serving as soup will thicken and flavours will come together nicely.

Stove top:  In large pot add all ingredients together and bring to boil.  Keep an eye on soup as you may need to add water as split peas absorb water a lot.  Turn heat down to simmer until split pea and vegetables are very soft. Stir occasional.   • 2 cups dried green split peas
  • 1 large chopped yellow onion
  • 2 medium carrots sliced
  • 2 garlic cloves chopped
  • 3 celery stalks chopped
  • 1 dry bay leaf
  • 1 tablespoon fresh parsley, chopped
  • 1 medium size potato, chopped
  • 3 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 10 cups of water

Instructions

Instant Pot:

  1. Place all the ingredients in the Instant Pot.  Stir well.
  2. Use the manual button to set for 30 minutes and the quick release when done.
  3. Remove bay leaf.
