VEGAN/GLUTEN FREE DREAM SQUARES

These squares remind me of a butter tart with surprise ingredients.  So creamy but packed with many different textures of yumminess … and the aroma from your oven will send every family member running to the kitchen.  I hate the clean up after baking so I love how this recipe can be made in 1 bowl!  Sometimes I double the recipe, especially this time of year, when I want to share these squares with extended family and friends.  Be sure to put this one on your Christmas baking list.  Your family will thank you for it!

Preheat oven 350F

Crust:

In small mixer bowl, combine all crust ingredients.  Beat at low speed, scraping bowl often until mixture is crumbly, about 1 minute.

Press into lined 9 X 9 ” square baking pan.  Bake for 15 – 20  minutes or until edges are lightly browned.

Filling:

In same bowl, combine sugar, flour, aquafaba, baking powder, salt and vanilla.  Beat at medium speed, scraping bowl often until well mixed, approximately 2 minutes.

Stir in remaining ingredients.

Carefully spread mixture over baked crust.  Continue to bake for 20 – 25 minutes or until lightly browned and filling is set.

Cool completely before lifting out of pan.  Cut into squares and enjoy these yummy treasures!!!

Crust:

  • 1 cup gluten free flour
  • 1/4 cup organic cane sugar
  • 1/2 cup vegan butter

Filling:

  • 1/2 cup organic cane sugar
  • 1/2 cup gluten free flour
  • 12 tablespoons aquafaba
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 cup Medjool dates, chopped
  • 1/2 cup organic dried cranberries
  • 1/2 cup unsweetened coconut flakes
  • 1/2  cup pecans, chopped

Instructions

Notes

What is aquafaba?   Aquafaba is the liquid in a can of chickpeas.  Store it in well sealed container in the refrigerator  or freeze it in ice cube trays.  I measure out 1 tablespoon of aquafaba for each ice cube.

These squares can be made ahead and freeze for 2 months.

Gluten free flour can be replaced with all purpose flour
