HAPPY HOUSE PESTO SAUCE

There is nothing I love more than the smell of fresh basil in my kitchen and every yummy pesto sauce starts with fresh basil!  I add pesto sauce to so many dishes, but my favourite is in steamed spiralized zucchini.  So quick and easy to make.  This Happy House Pesto Sauce is vegan, but you will find it’s just as cheesy as the real deal!

Place all ingredients but oil in mini food processor and blend well.  Gradually add oil while mix.

Yup, it’s that easy!

A quick and easy way to enjoy pesto is with zucchini noodles! Love using my Veggetti Pro Spiralizer to make spiral zucchini. I just steam the zucchini noodles for 1 minute and toss the pesto in. So delicious!

Ingredients

Scale
  • ¾ cup fresh basil
  • ¼ cup pine nuts or walnuts (or combination)
  • 1 garlic clove
  • 1 tablespoon Nutritional Yeast
  • ¼ cup avocado oil
  • salt and pepper to taste

Instructions

  1. Place all ingredients but oil in mini food processor and blend well.
  2. Gradually add oil while mixing.
  3. Add salt and pepper to taste

Notes

Always use fresh basil. I love growing mine in the garden but of course this time of year you can grow it indoors. Make sure the basil plants are placed in a spot which gives lots of sunlight during the winter months.
