I love the surprise crunch of the candied pecans and the dressing helps to give the salad a balance of sweet and savory.
I have not included the measurements for the salad as I know you will make the appropriate adjustments for yourself or a group of up to 6 people. I just eyeball it making sure it has the amount of each ingredient I want.
Use a combination of butter lettuce and baby spinach
Extra firm tofu, chopped into small cubes
Red onion, sliced
Green onion, chopped
Strawberries, sliced

Whisk all salad dressing ingredients together in small bowl. Drizzle over prepared salad and serve immediately.

Salad Combination:
- Use a combination of butter lettuce and baby spinach
- Extra firm tofu, chopped into small cubes
- Red onion, sliced
- Green onion, chopped
- Strawberries, sliced

Dressing: (makes enough for 6 side servings)
- 1/3 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar of Modena
- 2 teaspoons pure maple syrup
- Salt and pepper to taste, optional
Instructions
- Whisk all ingredients together in small bowl.

Notes
Keep any leftover dressing in sealed container. Will keep for 1 week
