GREEN SALAD WITH STRAWBERRIES AND CANDIED PECANS

A salad that has loads of different textures and bursts of sweetness, not to mention lots of protein!  It can be enjoyed as a meal or as a side with anything.  The butter lettuce and baby spinach are the perfect backdrop for the sweetness of the strawberries which make it taste like summer.  I love the surprise crunch of the candied pecans and the dressing helps to give the salad a balance of sweet and savory.

I have not included the measurements for the salad as I know you will make the appropriate adjustments for yourself or a group of up to 6 people.  I just eyeball it making sure it has the amount of each ingredient I want.

Use a combination of butter lettuce and baby spinach

Extra firm tofu, chopped into small cubes

Red onion, sliced

Green onion, chopped

Strawberries, sliced

Candied pecans for topping – get recipe HERE

Whisk all salad dressing ingredients together in small bowl.  Drizzle over prepared salad and serve immediately.
