COFFEE-CINNAMON DONUTS

Whenever I think of a donut I instantly think of coffee.  It must be the Canadian in me as Tim Horton’s is so popular here, eh?  Just because this recipe has coffee in it doesn’t mean you can’t enjoy it with a lovely cup of tea or tall glass of milk.  No need for a fancy glaze or gooey icing as a light dusting of icing sugar and a punch of cinnamon flavour makes this donut hold its own!  Go ahead and take a break with this perfect mid-day delight.

Preheat oven to 350F

Prepare flaxseed egg by combining ground flaxseed and water.  Let sit for 15 minutes to gel.

Beat sugar, butter and egg together in medium size bowl until creamy.

Add rest of ingredients (except icing sugar) and combine.

Spoon into donut tray.  Be careful not to overfill (see photo). Bake for 18 – 20 minutes or until sides of donuts are slightly golden.

Let donuts cool completely before removing from tray.  Dust with icing sugar.

Best enjoyed same day as baked.
