VEGETABLE LENTIL SOUP

If you love chunky vegetable soup, then this soup is definitely for you.  So full of goodness and no oil is needed!  Simply load up your cooking pot with the ingredients and let the magic happen.  I love using my Instant Pot for all my soups, but I included a stove top option as well.

Instant Pot option:

Place all ingredients in Instant Pot and stir well.  Make sure Instant Pot is set on “sealing”.

Press pressure cook and set time for 25 minutes.

Use the instant release.  Remove bay leaves and stir well before serving.

Stove Top option:

Place all ingredients in large pot.  Stir well, cover with lid and bring to boil.  Reduce heat to simmer with lid slightly askew and stir occasionally.  Cook until lentils are soft.  Remove bay leaves before serving.

Ingredients

  • 1 large yellow onion, chopped
  • 2 garlic cloves, chopped
  • 2 medium carrots, cubed
  • 3 celery stalks, chopped
  • 1 medium potato, cubed
  • ½ cup sweet peas, frozen or fresh
  • 1796 ml can organic crushed tomatoes
  • 1 cup dried brown or green lentils
  • 1 teaspoon dried thyme
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 bay leaves
  • 7 cups water

Instructions

Instant Pot option:
