GINGER QUINOA VEGETABLE MELODY

My family has never been a big fan of quinoa, but this flavour combination has become a hit in our home.  I love adding ginger quinoa to roasted, microwaved or steamed mixed vegetables.  It really is a perfect side for almost any meal and quinoa is rich in fiber and antioxidants!

Heat oil in saucepan over medium heat.  Add onion and sauté for 30 seconds.  Add turmeric, ginger and garlic.  Stir for another 30 seconds.

Add quinoa and broth.  Turn up heat to high and cook until boiling.  Stir well.  Turn heat down to simmer and cover with lid.  Let simmer for 15 minutes.  Remove from heat and let sit for another 5 minutes, still covered.  Quinoa will have absorbed broth.

Add ginger quinoa and salt and pepper to roasted, microwaved or steamed vegetables and stir.

  • 1 tablespoon avocado oil
  • 1/2 cup yellow onion, chopped
  • 1/8 teaspoon turmeric powder
  • 1 teaspoon fresh ginger, chopped finely
  • 1 garlic, chopped finely
  • ½ cup organic quinoa
  • 1 cup organic vegetable broth
  • 1500g bag frozen mixed vegetables of your choice, roasted, microwaved or steamed
  • Salt and pepper to taste
