What treat says “I love you”, looks beautiful and tastes yummy? Heart shaped cookies that combine peanut butter and chocolate, of course! They’re fun and easy to make and just in time for Valentine’s Day. The kids will enjoy putting the final touches on them!
I don’t know about you, but I have rolled out enough cookie dough to know that not all dough is created equal. The frustration when your dough sticks to your working surface is enough to make you give up! Not so with this dough. Flour your surface well and you will be happily surprised. Your heart cookies will be easy to handle and transfer nicely to your lined baking sheet. You will be making these cookies again and again! Enjoy.
Prepare cookie dough:
Prepare flaxseed egg by combining ground flaxseed and water. Let sit to gel for 15 minutes.
- In a large bowl using a hand mixer on medium speed, beat peanut butter, butter, syrup and egg until smooth. Set aside.
- Whisk flour, baking powder and salt together in small bowl.
- Stir half of dry ingredients into wet ingredients. Add rest of dry ingredients and finish mixing dough by hand.
- Wrap dough in plastic wrap and refrigerate for 2 hours.
Preheat oven to 325F
Divide dough in quarters. Roll out until ¼” thick onto floured parchment paper or silicone pad. Cut out cookies with heart cookie cutter and place on lined baking sheets.
Bake for 10 – 12 minutes.
Let cool for 10 minutes before transferring cookies to wire racks.
Decorating cookies:
Microwave chocolate chips and peanut butter in microwavable bowl for 1 ½ minutes. Stir well until smooth.
Drizzle over half of each heart and sprinkle with desired sprinkles.
Transfer cookies back onto baking sheets and place in refrigerator until chocolate sets. Approximately 15 minutes.
