SUPER EASY SEASONED WHOLE ROASTED CAULIFLOWER HEAD

I love a side dish that I can throw in the oven, set the timer, forget about it and know it will turn out great every time!  A whole roasted cauliflower with the perfect rub not only tastes divine but it looks quite impressive on the dinner table too.  You just have to try this recipe out!

*This recipe is for a small cauliflower.  Double the rub recipe for a larger cauliflower head.

Preheat oven to 400F

1. Prepare rub:

Whisk all dry ingredients together with avocado oil and lemon juice.

2. Prepare cauliflower:

Carefully cut off leaves and a little of the bottom so that it sits balanced in the casserole dish but leave the core in place.  The core will keep the cauliflower from falling apart when roasting.

Wash cauliflower and pat dry.

3. Place in casserole dish and pour rub over it.  Massage rub all over cauliflower until well coated.

Cover with lid or aluminum foil.

Bake for 40 minutes.  Remove cover and bake for another 10 minutes.  Cauliflower is done when fork tender.  Serve with lemon wedges and garnish with chopped or dried parsley.

  • 1 small head of cauliflower, leaves removed
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon turmeric (option)
  • 1/8 teaspoon cayenne (option: if you want to kick it up a notch!)
  • 2 tablespoons avocado oil
  • 1 teaspoon fresh lemon juice
  • Fresh or dried parsley for garnish
