BAKED SWEET POTATO FRIES WITH CAESAR DRESSING DIP

There are so many wonderful benefits to sweet potato so if you’ve never thought of introducing it into your diet here is a great way to start.  Sweet potato is high in fibre, vitamin C and reduces inflammation.

Sweet potato fries are so easy to prepare and are a sweet side to many dishes.  I love to serve them with a burger, sandwich, soup or salad.  They are also a fun appetizer for a family gathering.

Preheat oven to 450F – Don’t bake the fries in a lower heat or they will be soggy.

How to slice the potatoes to make the perfect fries:

It’s important to cut the fries as close to the same size as possible so they will bake evenly.

Cut potatoes lengthwise into 1/4 “slices.  Cut each slice into ¼“ fries.

Place them in a bowl and add all ingredients except sesame seeds. Toss fries until well coated.

Place on baking sheet.  Bake for 20 minutes.  Remove from oven and turn the fries.  Bake for another 10 minutes.  Fries will be crispy and turn slightly brown.

Sprinkle with sesame seeds.  Serve immediately with dressing.
