BEST BUCKWHEAT VEGAN WAFFLE

I was inspired to make a vegan gluten-free batter after visiting a restaurant that served many of their sandwiches and burgers with a waffle in place of the bread or hamburger bun.  I thought this was genius!   Using a basic batter and changing it slightly to suit the dish opens up so many possibilities.  What a better way to get that vegan gluten-free slice of bread or bun that is next to impossible to find.  The task was creating a batter that was perfect for several uses, but I nailed it!!  This batter is light and fluffy, can be made ahead and be ready to use for whatever you need.

I chose buckwheat because of all the wonderful health benefits it offers.  It’s a great source of protein, fibre and is gluten-free.  Feel free to add fruit, nuts, seeds or any seasoning to create your own waffle or whip up some pancakes.    I have also added chopped red onion and shredded zucchini to the batter when I grill them for sandwiches or just a snack!  (yummy with hummus)

Place all dry ingredients in a bowl and whisk well.

Place all wet ingredients in another bowl and whisk well.

Add wet ingredients to dry.  Use a hand or an immersion blender and blend well.

Pour batter into preheated waffle iron and cook until waffle iron indicator signals cooking is done.    Makes 8 waffles.

Great to use for sandwiches too!!   Make it sweet or savoury.   It’s healthy and delicious every time.

Basic buckwheat batter recipe: 

  • 1 ½ cups buckwheat flour
  • ¾ cup gluten free flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 2 tablespoons coconut sugar
  • 1 teaspoon arrowroot starch/flour
  • ½ cup aquafaba
  • 2 cups plant-based milk
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon apple cider vinegar

Instructions

  1. Place all dry ingredients in a bowl and whisk well.
  2. Place all wet ingredients in another bowl and whisk well.
  3. Add wet ingredients to dry.  Use a hand mixer or an immersion blender and blend well.
  4. Pour batter into preheated waffle iron and cook until waffle iron signals done.

 


Notes

Tip:  To keep cooked waffles hot, place waffles on cookie sheet in 200F oven.

Note:  Waffles can be made ahead and frozen.

To reheat waffles:   Put frozen waffles on wire rack in oven at 350F for approximately 20 minutes.
