This simple and healthy meatless meatball recipe falls under that category and your guests will think you were in the kitchen for hours. It’s so easy to prepare with only 8 ingredients and does not include any oils. It’s vegan, gluten free and nut free.
In a food processor, combine the drained, rinsed and patted dry chickpeas, garlic cloves and rolled oats.
Mix for about 10 seconds, until finely chopped. When you press the mixture between your fingers, it should hold together.
Transfer mixture to a large bowl. Add the rest of the ingredients and mix until combined well. Preheat oven to 375 F.
Line a cookie sheet with parchment paper. Using your hands, scoop out approximately 2 tablespoons of the mixture and form a ball. Should make 12 meatballs. Bake until golden brown. About 25 minutes.
Serve with garlic mashed potatoes and Happy House Miso Gravy.

3 garlic cloves, crushed
½ cup rolled gluten free oats (not instant)
1 tablespoon fresh parsley, finely chopped
½ teaspoon salt
2 tablespoons nutritional yeast
1 teaspoon fresh lemon juice
1 cup shredded zucchini (about ½ medium zucchini)
