BROWNIE BITES

My favourite Lara Bar is the Chocolate Chip Brownie and I finally made “bites” to duplicate this yummy chocolaty delight.   This bite made with Medjool dates is full of fiber, antioxidants and contains more potassium than bananas.  Medjool dates also help promote digestion and help prevent cardiovascular disease.  They really do make the perfect snack and will satisfy any chocolate cravings!!

 

In a food processor add walnuts, dates, cocoa, almond flour and sea salt.

Blend until well mixed.  Walnuts should appear as tiny pieces in mixture.  Add vanilla.

Mix again and slowly add water a teaspoon at a time.

Line cookie sheet and roll mixture into bite-sized balls.

Turn Brownie Bites into Chocolate Truffles. Simply dip and roll the Brownie Bites in melted vegan chocolate. Place on lined cookie sheet and refrigerate for approximately 15 – 20 minutes for chocolate to set.

Place in freezer for one hour.   Can store in freezer or refrigerator.

Ingredients

  • 1 cup walnuts
  • 1 1/2 cup pitted Medjool dates (12 dates)
  • 3 1/2 tablespoons of cocoa powder
  • 4 tablespoons almond flour
  • 1/8 teaspoon sea salt
  • 1 teaspoon pure vanilla extract
  • 3 teaspoons water
  • 1/8 cup vegan mini chocolate chips

Instructions

  1. In a food processor add walnuts, dates, cocoa, almond flour and sea salt.

Can store in freezer or refrigerator in air tight container or sealed freezer bag.
