I was inspired to create this recipe after enjoying a lovely salad with candied pecans at a local restaurant. What a tasty surprise that was, so I thought I would give it a try at home. Get creative and use pecans as toppers on pancakes, waffles, ice cream, toast or salad. Fair warning … try to resist snacking on them, I dare you! I will be featuring a salad soon where I will be adding these yummy candied pecans. Hope you love them as much as I do!
In a small bowl, whisk the sugar, water, vanilla and salt together. Set aside.
In a saucepan over medium heat, toast the pecans for 2 – 3 minutes stirring occasionally to prevent burning. When you can smell the pecans turn the heat off and drizzle the syrup over them. Stir well to coat all the pecans.
Remove from heat and spread the pecans on a lined cookie sheet to cool. Once they have completely cooled break apart.
