DELUXE BLONDE BROWNIES

If you love your brownies chewy these are calling your name.  No need for icing as they boast perfection all on their own.  I did add chocolate chips but feel free to include walnuts or pecans if you like.  The brownies are vegan and gluten-free, but they are so sinful no one will care!

Preheat oven 350F

Grease or line 9” x 13” pan.

Prepare the flaxseed eggs by mixing 2 tablespoons of ground flaxseed and 6 tablespoons of water.  Let sit for 15 minutes.

Whisk flour, xanthan gum, baking powder and salt in a medium bowl.  Set aside.

Beat sugar, brown sugar and butter in a large bowl until light and fluffy.  Add flaxseed eggs and vanilla and beat until well mixed.  Stir in flour mixture until well blended.  Fold in chocolate chips.

Spread batter evenly in pan and bake for 25 to 30 minutes.  Edges should be golden brown.

Cool completely before cutting into squares.

  • 1 ½ cups oat flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon aluminium free baking powder
  • ½ teaspoon salt
  • ¾ cup organic sugar
  • ¾ cup organic brown sugar
  • ½ cup vegan butter
  • 2 teaspoons pure vanilla extract
  • ½ cup dairy-free chocolate chips
