HOW TO CARAMELIZE ONIONS

How can a simple vegetable like onions be turned into something so epic that you want to add it to every hamburger, pizza, sandwich and vegetable salad?  Taking the onion to the next level by caramelizing it is a labour of love but so worth the time and effort.  The sweeter flavour is undeniably going to take a simple dish to the OMG category with only 5 simple ingredients.  What are you waiting for?

How the caramelization process happens:

During the process of caramelizing, the onions release their sugar and stick to the bottom of the pan creating a lovely flavour.  Scraping the bits and incorporating them back into the onions is what gives the onions that caramelized flavour and beautiful golden-brown appearance.  Using a non-stick pan would not work well as the sticky bits would be difficult to develop.

Begin by preparing onions.  Peel and cut onions ¼” to 1/8” thick and cut out base.

In a large deep saucepan, heat up avocado oil with medium heat.  Add onions and continue stirring until onions are translucent.  Add white wine, vegetable stock and salt.  Stir well.  The secret to browning the onions is to not stir too frequently.

Once you begin to notice there are brown bits sticking to the bottom of the pan lower the heat.  Scrape the bits and incorporate them into the onion mixture.  If you find the pan is difficult to scrape, you can add a little water to deglaze it.

Caramelizing the onions will take approximately 45 minutes to an hour.

  • 3 tablespoons avocado oil
  • 56 yellow onions, sliced ¼” to 1/8” thick (yields 2 cups of onions)
  • 3 tablespoons white wine
  • 3 tablespoons vegetable stock
  • ½ teaspoon salt
  • Water

Instructions

The onions can be stored in an air tight container up to 1 week or can be frozen for 2 months.
