Trust me I named these squares mind-blowing for a reason. It’s hard to believe anything this decadent and yummy could be filled with so much goodness. No need to turn on your oven for this dessert, it’s completely raw. The combination of the dates and tahini make the perfect natural caramel sauce. Mejdool dates are high in fibre and tahini is a great source of protein and vitamin B. Eat up!
Base Layer:
In a food processor, blend dates, walnuts, vanilla and cocoa powder until a crumble has formed. Add water one teaspoon at a time. The mixture should stick together when pinched.
In a lined 8 x 8 pan press the mixture into an even layer. Place in the freezer to set.
Caramel Layer:
Blend the dates in a food processor for about a minute, just enough for the dates to be chopped. In a medium bowl, mix together tahini butter and coconut oil. Add this mixture and pinch of salt to chopped dates. Continue blending, adding the 6 tablespoons of water a tablespoon at a time until a creamy caramel mixture has formed. You may need to add more water if the consistency is too thick. Be careful not to make it too runny. Spoon caramel over crust evenly.
Chocolate Topping:
Place chocolate chips and coconut oil in a microwaveable bowl. Microwave for 2 minutes, stir until smooth. Pour over caramel layer.
Place in refrigerator to set. Approximately 2 hours.
These squares can be frozen up to 3 months, but they won’t last that long!

I made the mind-blowing caramel squares and OMG! Three words: Yum! Yummy! and Yummiest! It’s hard to believe that this delicious sweet treat contains no added sugar.
