ORANGE-MAPLE ROASTED CARROTS

Get ready to turn a simple vegetable into an amazing experience.  The combination of maple syrup with freshly squeezed orange juice and rosemary take the carrot to a whole new level.  This side dish is baked in the oven and ready in 40 minutes with no oil needed.  Your taste buds will love these beautifully glazed roasted carrot slices.  Enjoy!

Preheat oven to 400F

Whisk all dressing ingredients except salt and pepper in small bowl and set aside.

Peel and chop carrots and place in large bowl.

Pour prepared dressing over carrots and toss to coat.  Place on lined baking sheet and pop in oven for 30 minutes.  Much of the dressing will be baked in the carrots at this point.  Turn the carrots over and place back in oven for another 10 minutes.  Carrots should be fork tender.

Place in serving dish, sprinkle with salt and pepper and garnish with parsley.  Serve immediately.

Dressing:

  • 3 tablespoons maple syrup
  •  Juice of half orange
  • 1 garlic clove, minced
  • 1 fresh rosemary sprig, leaves stripped
  • Salt and pepper to taste

Carrots:

  • 8 large carrots, peeled and sliced ½” diagonally
  • Fresh parsley, finely chopped for garnish

Instructions
