VEGAN CHEESE SAUCE

My Italian background was one of the reasons why it took me so long to give up cheese.  Let’s face it; we put it on everything!!  As I investigated the plant based lifestyle, I realized that even cheese can be reinvented.  There are many versions of this cheese sauce, but I have to admit I do love mine.  Serve this sauce over burritos, nachos, enchiladas or enjoy it all on its own as a dip … so effortless to make and so healthy.  It’s definitely the “I can’t believe it’s not cheese” cheese.

Place potatoes, carrots, onions, almonds and milk in saucepan.

Bring to boil and reduce heat to simmer for approximately 10 – 15 minutes.  Carrots and potatoes should be fork-tender.  Transfer to a blender.  Add rest of ingredients and blend for approximately 15 seconds until sauce is smooth and creamy.  Taste for salt.

Ingredients

  • ½ cup potatoes, chopped
  • ½ cup carrots, chopped
  • ½ cup onion, chopped
  • ¼ cup blanched almonds
  • 1 cup + 2 tablespoons unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon + 1 teaspoon fresh squeezed lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic salt
  • 1/8 teaspoon chipotle powder
  • Salt to taste

Instructions

  1. Place potatoes, carrots, onions, almonds and milk in saucepan.
