VEGAN CREAMY FETTUCCINE ALFREDO

One of those small pleasures you think you have to give up when you decide to choose a plant-based lifestyle is a white sauce.  I have created an easy plant-based sauce that will knock your socks off!!  This Alfredo sauce is so creamy and cheesy; you won’t believe its dairy and oil free.  It can be made ahead and kept in the refrigerator in an airtight container for up to one week.

Alfredo Sauce:

Place onion, almonds, garlic and milk in saucepan.  Bring to a boil and reduce to simmer until onions are fork tender.

Pour into high speed blender and add nutritional yeast, parsley, salt and pepper.  Blend until smooth.  Taste, as you may need to add more salt and/or pepper.

Fettuccine or Linguine Pasta: (either pasta will work well)

Follow instructions on box.  Do not overboil pasta!

Ingredients

Scale
  • 1 medium onion, chopped
  • ¾ cup blanched almonds
  • 2 large garlic cloves, crushed
  • 1 cup plant-based milk (unsweetened almond milk or soy)
  • 2 tablespoons nutritional yeast
  • 2 teaspoons dried parsley
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 340 g box fettuccine or linguine pasta (I prefer Catelli gluten-free brand)

Instructions

Alfredo Sauce:

  1. Place onion, almonds, garlic and milk in saucepan.
  2. Bring to a boil and reduce to simmer until onions are fork tender. (approx. 20 minutes)
  3. Pour into high speed blender and add nutritional yeast, parsley, salt and pepper.
  4. Blend until smooth.
  5. Taste, as you may need to add more salt and/or pepper.
