VEGAN PULLED PORK

This vegan pulled pork recipe will leave you feeling like you have experienced the real deal. Using all the right spices and ingredients is all it takes to make this fruit look and taste just like pulled pork. Jackfruit is loaded with protein and antioxidants as well, so eat up and enjoy!!! Open cans of jackfruit and drain liquid from cans. Rinse jackfruit in strainer. Remove all the seeds and cut out core of each piece of jackfruit.

Before you start to cook the jackfruit get all your spices together and ingredients ready. This will make the process move along faster.

Heat the avocado oil in the pan and add the sliced onion. Sauté  the onion until translucent.

Add the garlic, jackfruit, spices, vegan Worcestershire sauce and liquid smoke. Mix well.

Preheat oven to 350 F. Add the vegetable stock and bring to a gentle boil. Reduce heat and simmer for 30 minutes. The stock should be mostly absorbed and the jackfruit should appear to be more broken down. Keep an eye out for any seeds you might have missed previously. Discard any seeds.  Spread the cooked jackfruit on lined cookie  sheet and bake for 1 hour until the liquid is gone and the jackfruit has become a deeper brown.

Remove from the oven and pour the barbecue sauce over the fruit. Mix well covering the fruit completely with the sauce. Place back in the oven for 15 minutes. Serve hot on a warm bun with coleslaw.

  • 2 tablespoons avocado oil
  • 1 medium onion sliced 
  • 3 cloves garlic minced 
  • 3 cups canned jackfruit 
  • 2 teaspoons salt 
  • 1 teaspoon pepper
  •  teaspoon chili powder 
  • 1 teaspoon smoked paprika 
  • ½ teaspoon cayenne pepper 
  • 1 teaspoon vegan Worcestershire 
  • 1 teaspoon liquid smoke 
  • 2 cups low sodium vegetable stock 
  • ½ cup vegan bbq sauce. ( I used Mr. Stubbs) 

Instructions

  2. Heat pan with oil and sauce onion until transparent.
  3. Add crushed garlic, jackfruit, spices, Worcestershire sauce and liquid smoke. Stir to coat evenly.
  4. Preheat oven to 350 F. 
  5. Add vegetable stock and bring to a gentle boil.
  6. Reduce heat, and simmer for 30 minutes until the liquid is completely absorbed by the fruit.
  7. Spread the cooked jackfruit on lined cookie sheets and bake for 1 hour until the liquid has baked out and jackfruit and become a deeper brown in colour.
  8. Remove the jackfruit from the oven and pour the barbecue sauce over the fruit.
  9. Mix well, covering all the jackfruit with the sauce.
  10. Return to the oven and bake for another 15 minutes.
