VEGGIE GROUND MEAT

What if I told you, you could easily create your very own veggie ground meat in less than 30 minutes?   Yup, you read that right.  Get ready to have your vegan world rocked!

When you look at the ingredients in a store bought veggie ground you will most likely find a processed food that you don’t really want to eat or you might not even have a clue what the ingredients are.  This recipe takes the mystery out of veggie ground and provides a healthy option.  It can be a wonderful addition to many of your favourite dishes.  Healthy veggie ground can be added to lasagna, tacos, nachos, pizza and pasta sauce, and that’s just the beginning!!  There is no end to what you can cook up and it freezes nicely so it’s ready to use.  Let’s make this!

Chop cauliflower in pieces, remove core and place in food processor with mushrooms.  You may need to process in 2 batches. Process until mixture is a fine crumble.  Be careful not to process too long.

Transfer mixture to a bowl and add paprika, basil, salt, pepper, tomato paste and soy sauce substitute.   Mix well.   Set aside.

 

Sauté onion with avocado oil until translucent, approximately 3 minutes on medium heat.   Add garlic and continue to sauté for another minute. Turn heat down and add cauliflower mixture.  Stir occasionally and cook until there is no liquid visible and mixture begins to stick to the bottom of the pan. Scrape the bottom of the pan and continue to cook for another minute until mixture is a darker colour.  Cool veggie ground meat and store in refrigerator up to 1 week or freeze for 3 months.

Ingredients

  • 1 cauliflower
  • 15 cremini mushrooms
  • 1 medium yellow onion, chopped finely
  • 2 garlic cloves, crushed
  • ½ teaspoon smoked paprika
  • ½ teaspoon basil, dried
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce substitute (coconut amino acids)
  • 4 tablespoons avocado oil

Instructions

Notes

You can store in refrigerator up to 1 week or freeze for 3 months.  This veggie ground can be use for any ground meat alternative.  Use it the same way you would with any ground meat.  Add your own spices for whatever you are creating.  Have fun!!
