Gluten-free, vegan and oh so yummy! Cookies with a Kiss are so quick and fun to make, I highly recommend making them with your children. They will love placing the kiss in the center of each cookie!!
Preheat oven 350F
Prepare flaxseed egg by combining 1 tablespoon ground flaxseed and 3 tablespoons water. Let sit for 15 minutes to gel.
Using hand blender, mix butters and vanilla until smooth. Add sugars and mix until well blended. Add flaxseed egg and beat until just blended.
Add flour ½ cup at a time until combined. Do not over-blend. With hands in bowl roll dough into a ball. Refrigerate for 10 minutes.
Scoop 1 tablespoon of dough and form a ball for each cookie.
Place 1 ½ inches apart on lined cookie sheet. Using the back of a spoon, make a well in the centre of each cookie.
Press a chocolate chunk into each well.
Bake for 12 – 14 minutes. Edges should be golden brown.

- ½ teaspoon pure vanilla extract
- 1/3 cup organic brown sugar, firmly packed
- 1 ½ tablespoons organic sugar
- 1 flaxseed egg (1 tablespoon ground flaxseed + 3 tablespoons water)
- 1 cup gluten-free flour
- 24 dairy-free semi-sweet chocolate chunks. (I use Enjoy Life Brand)
