It took some trial and error to perfect this recipe, but I knew I had succeeded when all dozen were gone in a day! These easy to make muffins are so moist and delicious and your home will smell divine when you bake them. I love making my muffins extra large so I double the recipe below. Either way, they are yummy!!!
Directions: Place peeled ripe bananas in large bowl and mash using a fork.
Add aquafaba and mayo. Blend well.
In a separate bowl add all dry ingredients and chocolate chips, blend using a whisk.
*Use fine cane sugar, if you are unable to find it use course cane sugar but put the sugar through a coffee grinder or food processor
Gradually add dry ingredients to wet ingredients until well blended.
Begin spooning batter into lightly oiled muffin pan. I use coconut oil to lightly oil my muffin pan.
Bake at 350F for 50 mins for 1 hour. Muffins should look golden brown. Let muffins cool before removing from pan.

- 3 tablespoons of aquafaba
- 3 medium ripe bananas
- 1 1/2 cups gluten free flour
- 3/4 cup organic cane sugar*
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1/2 cup chocolate chips
