BEST VEGAN FRENCH ONION SOUP

I don’t say this about just any soup, but French Onion Soup is truly a work of art!  All that gooey mozzarella on top, the yummy toasted baguette slice in the middle and the buried caramelized onion at the bottom is the treasure!  There is a richness of flavour with each spoonful of this classic soup.  It can be a meal all on its own or for that hearty appetite, a starter.   Who wants a bowl?

Prepare the soup:

In a small bowl, add the vegetable bouillons and 1 cup of boiling water.  Stir until bouillons have dissolved.  Set aside.

If you have made the caramelized onions ahead reheat them, using medium-low heat, in a deep skillet or large pot with a little avocado oil. 

Add garlic, white wine, Worcestershire sauce and flour.  Stir well to coat the onions with the flour.  Add the bouillon mixture and 6 1/4 cups water.  Continue to stir adding thyme, pepper, salt and bay leaf.  Bring to a boil, then lower the heat and let simmer for 45 minutes.

Prepare the baguette:

Preheat the oven to 350F

Cut the baguette into slices that will fit into your oven-safe soup bowls.  Place the baguette slices on a cookie sheet and bake for 8 – 9 minutes, flip and bake again.

While the bread is baking, make the mozzarella.

Prepare the soup bowls:

Set oven to broil.  Place the oven-safe bowls on a baking sheet.

Ladle out the soup into the bowls.  Place a baked slice of baguette into each bowl and generously spoon the mozzarella over the bread.  Place in oven and broil for 2 – 3 minutes.  Watch mozzarella so it does not burn.

Serve immediately.

  • 56 yellow onions, caramelized.   Get recipe HERE
  • 2 vegan vegetable bouillons + 1 cup boiling water
  • 3 garlic cloves, crushed
  • 1 cup vegan white wine
  • 3 tablespoons vegan Worcestershire sauce
  • 1 tablespoon gluten free flour
  • 6 1/4 cups water
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • ¼ teaspoon pepper
  • 1 teaspoon salt
  • Vegan mozzarella recipe HERE (you will need to double the recipe for 4 bowls)
  • Baguette – gluten free
