BLUEBERRY COCONUT HEMP BITES

When you’re transitioning to a plant-based lifestyle it’s always a good idea to have a tasty healthy snack available for your family to grab and go.  These bites are so easy to put together and freeze well.

In a food processor, mix dates and almond flour until well blended.

Add flaxseed, vanilla, salt, blueberries, coconut, hemp seeds and water.

Blend well.

Scoop out mixture and form into bite-sized balls.

Place bites on baking sheet and freeze for 1 hour.

Store in refrigerator for a couple of weeks or freeze in a sealed container up to 3 months.  No need to thaw … can be enjoyed frozen!

When you’re transitioning to a plant-based lifestyle it’s always a good idea to have a tasty healthy snack available for your family to grab and go.  These bites are so easy to put together and freeze well.  They are also a great addition to your children’s school lunches.


Ingredients

Scale
  • 1 ¼ cup almond flour
  • 1 ¼ cup Medjool dates, tightly packed and pitted
  • 1 tablespoon ground flaxseed
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon sea salt
  • ¼ cup dried blueberries
  • ¼ cup unsweetened coconut flakes
  • 2 tablespoons hemp seeds
  • 1 teaspoon water

Instructions

  1. In a food processor, mix dates and almond flour until well blended.
  2. Add flaxseed, vanilla, salt, blueberries, coconut, hemp seeds and water.
  3. Blend well.  Scoop out mixture and form into bite-sized balls.
  4. Place bites on baking sheet and freeze for 1 hour.
