I love Lara Bars, but they can be costly if you eat as many as I do! With this in mind, I selected all my favourite ingredients and put together my own version of this yummy healthy bar. It really does make the perfect mid-morning snack or anytime snack. So easy to make that your children can help and they will look forward to seeing it in their lunch bags!!
In a food processor, combine almonds, dates, flaxseed, salt and vanilla.
Slowly add water ½ teaspoon at a time. If the mixture is too dry feel free to add more water. Transfer to a bowl and add cranberries and chocolate chips. Mix gently (I use my hands) just enough to incorporate the cranberries and chips into the mixture.
Line an 8 x 8 pan, leaving a little extra paper hanging over the sides for easy lifting. Transfer mixture into lined pan and press down into an even layer. Place in freezer for 2 hours before cutting into bars.
I eat them right out of the freezer!

- 1 ¼ cup blanched almonds, chopped finely
- 1 ¼ cup lightly packed medjool pitted dates
- 1 tablespoon ground flaxseed
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon salt
- ¼ cup organic dried cranberries
- ¼ cup mini dairy-free chocolate chips
- 2 teaspoons of water
Instructions
