CHOCOLATE RICE-OAT GRANOLA BARS

Who is looking for the perfect blend of chocolate with a load of goodness packed into one bar?  I got you covered.  There is a long list of wholesome ingredients in this bar with just the right amount of chocolate to make you think you are eating dessert.  The right snack for anytime of the day!

Prepare granola layer:

Preheat oven to 350F

In food processor pulse brown rice crisps and oats just until it is a crumble like consistencyBe careful not to over blend or you will end up with flour.  There should still be some whole rice crisps.  Please see photo for consistency.

Transfer to large bowl and add rest of ingredients.  Mix well.

Press mixture firmly into 8 x 8” lined baking pan.

Bake for 20 minutes.  Edges should appear slightly golden.

Cool completely.

Prepare chocolate topping:

In small microwavable bowl add chocolate chips and nut butter.  Microwave to 2 minutes.  Stir chocolate mixture well and pour over granola.  Spread evenly.

Place in refrigerator until chocolate is set, approximately 1 hour.

Cut into 18 bars.

Granola bar ingredients:

  • 1 cup gluten-free brown rice crisps
  • 2 cups gluten-free oats
  • ½ cup blanched slivered almonds
  • 2 tablespoons ground flaxseed
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ½ cup sunflower seeds, unsalted
  • ½ cup dairy free semi-sweet chocolate chips
  • 1 cup organic nut butter (I used sunflower butter)
  • ½ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • ¼ cup plant-based milk (not coconut)

Chocolate topping:

  • ¾ cup dairy free chocolate chips
  • 2 teaspoons nut butter (I used sunflower butter)
