CRANBERRY SHORTBREAD BARS

Nothing says Christmas like shortbread or cranberries so why not combine the two to make this shortbread as festive as possible!!!  This holiday bar is perfect for a Christmas cookie exchange or a hostess gift.  With only 7 ingredients it is so simple to whip together and its vegan and gluten-free.  Enjoy!

Whisk all dry ingredients and cranberries in medium bowl.

Cut in vegan butter using pastry blender until well blended.  Place dough in refrigerator for 10 minutes.

Preheat oven to 350F

Press dough evenly into lined 8 x 8” pan.  Bake for 30 minutes.

Cool for 20 minutes before cutting.  Shortbread will still be warm but it’s easier to cut into bars at this point.

Place in refrigerator to cool completely before enjoying.
