CREAMY BERRY PARFAIT

 

When I asked my mother what she wanted to have for Thanksgiving dinner she immediately asked me to make this dessert.  I would consider this parfait a summer dessert but my mother obviously has no objections to eating it all year round!   It only has 4 ingredients so it’s probably the easiest dessert to put together and the added bonus is you can prepare it a day ahead.

Directions:  Whisk yogurt and milk in medium bowl until blended.  Add dry pudding mix; beat for 2 minutes.  Stir in 1 cup of coconut whipped cream.

Place 3 blackberries on bottom of 6 parfait glasses.  Scoop cream mixture in  each glass and refrigerate for 4 hours or until firm.  Serve with dollop of coconut cream and berries.  I love topping with toasted unsweetened coconut flakes.

  • 1440 g  vanilla coconut yogurt (I use Yoso  brand )
  • 3/4 cups plant-based milk ( I use coconut)
  • 1 pkg vanilla (4 serving) instant pudding 
  • 1 cup thawed coconut whipped cream and more for garnish (I use So Delicious brand)
  • Berries for garnish (I use blackberries and strawberries)
  • Toasted unsweetened coconut flakes

Instructions

  1. Whisk yogurt and milk in medium bowl until blended. 
  2. Add dry pudding mix; beat for 2 minutes. 
  3. Stir in 1 cup of coconut whipped cream. 
  4. Place 3 blackberries on bottom of 6 parfait glasses. 
  5. Scoop cream mixture in  each glass and refrigerate for 4 hours or until firm. 
  6. Serve with dollop of coconut cream and berries.  I love topping with toasted unsweetened coconut flakes.  

Notes

This parfait can easily be made into a delicious Creamy Berry Pie.  Simply bake a pie crust and let cool completely before adding the parfait cream.  Chill for 4 hours and serve with berries, more coconut whipping cream and a sprinkle of toasted coconut.
