DECEMBER’S COOKIE OF THE MONTH: CHRISTMAS THUMBPRINT COOKIES

What other cookie could I choose for Christmas?  It had to be a shortbread cookie but with a difference!  This cookie is all dressed up with its green and red colours.  So festive!  My cranberry-orange sauce  is a lovely addition to these wonderful holiday cookies.  The combination of the shortbread, nuts and cranberry sauce just screams Christmas.  This cookie freezes well and is perfect for a Christmas cookie exchange.

Preheat oven to 400F.

Use mixer to cream butter and sugar until light and fluffy.  Blend in vanilla.

Combine flour and salt in separate bowl.  Add to butter mixture and blend well.

Shape dough into balls of about 1 ½ tablespoons each, roll in pistachios.

 

Place 2 inches apart on lined cookie sheet, flatten slightly and indent centers.

Bake 10 to 12 minutes or until lightly browned.  Cool on wire racks.  Add sauce or jam to centers.

  • 1/4 cup organic raw sugar
  • 1/2 teaspoon pure vanilla extract
  • 2 cups gluten free flour
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped unsalted pistachios
  • Jam or cranberry sauce

Notes

You could substitute walnuts or pecans for the pistachios.

These cookies can be frozen for 3 months.
