EASY PEASY GRANOLA

This granola took some effort to get just right and I’m really happy with the results.  The ingredients are lectin free and each has great health benefits.  It stores well in an airtight container and you can freeze it too!  Dress it up in a pretty jar and it makes the perfect hostess gift.  I love it on yogurt, fruit and smoothie bowls or just on its own. It’s really that good and good for you.  Enjoy!

Directions:  Preheat oven at 300 F

Place ½ cup blanched almonds in mixer and blend until finely ground.  Add remaining almonds and walnuts and pulse a few times.  Some almonds will remain whole, but that is fine.

Place in bowl and add rest of ingredients.  Stir until well blended.

Line cookie sheet with parchment paper and spread granola evenly.  Press firmly, flattening the mixture.   Bake for 30 minutes.  Granola should appear golden brown.

Cool completely before breaking apart and enjoying.

  • 1 cup of blanched almonds
  • ½ cup raw walnuts
  • ¼ cup ground flaxseed
  • 1/3 cup raw hulled sesame seeds
  • ½ cup chopped pecans
  • ¼ cup raw hulled hemp seeds
  • 1/3 cup organic dried blueberries
  • 1/3 cup organic dried cranberries
  • ½ cup unsweetened coconut flakes
  • 2 teaspoons cinnamon
  • ¼ teaspoon sea salt
  • ¼ cup pure maple syrup
  • ¼ cup coconut oil
  • 2 teaspoons pure vanilla extract.

Notes

Refrigerate granola in a sealed container up to 1 week or freeze for 2 months.
