It really is amazing how many egg substitutes there are to choose from for any given recipe. Tofu scramble is the ultimate replacement for scrambled eggs. The simple seasonings I use are ones I’m sure you have in your kitchen and I love adding onions and any chopped-up leftover veggies in my refrigerator. I recommend using pressed extra-firm tofu for the best results. Serve it straight up, on toast, a bagel, in a breakfast wrap or atop a bed of greens. There really are no hard and fast rules so have fun!!
Health benefits of tofu:
According to foodyourself.com, tofu has many health benefits. It is a good source of ‘complete’ protein, meaning that it has a balanced amino acid profile along with fibre, potassium, magnesium, iron, copper and manganese. So, eat up!
How to press tofu:
If you don’t have a tofu press, there are a couple of ways to get around it.
Line a plate with 4 paper towels. Place block of tofu on plate and a small cutting board on top of tofu. Put books or cans on top of cutting board to add weight. Place in refrigerator overnight. You may have to replace wet paper towels.

Press tofu overnight to remove any extra water.
Crumble tofu in a medium size bowl and add yeast, garlic powder, salt and pepper. Stir well.
Add avocado oil to saucepan and sauté tofu mixture for 3 – 4 minutes until slightly golden.
Serve immediately.
If you choose to include onions sauté them first until translucent. Add seasoned crumbled tofu to onions and continue to sauté until slightly golden.

- 1 tablespoon avocado oil
- 1 – 400g extra firm organic gluten-free tofu
- 1 heaping teaspoon nutritional yeast
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- Yellow or red onion, chopped finely (optional)
- Veggies of choice, chopped (optional)
Instructions

I use Superior Extra Firm Organic Tofu (package of 3 available at Costco) and I do not need to press the tofu. I saute lots of veggies before and sometimes top the dish with salsa, so yummy.
