Whoever said pizza is not a breakfast food hasn’t experienced the “breakfast pizza”! It’s a fun way for your family to start the day and your kids will never head to school on an empty stomach again. Have I convinced you yet? The crust is a simple healthy granola base and you select your favourite sauce and toppings. No need to feel guilty if you find yourself reaching for another slice. It’s jam-packed full of nutrients!
The leftover crust is freezer friendly as well. Leave a slice on the counter for 20 minutes to thaw and add your toppings. Makes a perfect snack or dessert.
Preheat oven 350F
Mix all dry ingredients (first 6 ingredients) in medium size bowl and set aside.
Add nut butter, vanilla extract, rice syrup, coconut oil and milk to large pot and heat over medium/high heat. Stir constantly until bubbling. Turn off heat immediately and stir in dry ingredients until well coated.
Press granola crust firmly and evenly into a lined 12” pizza tray. I use a plastic bag like a mitten to help press the granola down. BE CAREFUL AS GRANOLA IS HOT.
Bake for 10 – 12 minutes. Edges will appear slightly golden brown.
To serve several people: Spread sauce over crust and add toppings. Slice and serve immediately.
To customize: Cut pizza into slices and everyone can personalize their own.
For either option be sure to cut into slices while still warm.
