LENTIL SOUP

This cozy soup can feel like a warm hug on a cold winter day and it’s gluten free, soy free, dairy free, low fat, oil free and vegan!!  It’s easy and quick to make!  Just throw all the ingredients in the Instant Pot and as they say…… set it and forget it.  Now that’s my idea of cooking!!

Instant pot:  Put all ingredients in instant pot and stir.

Using manual button, set for 25 minutes and use quick release when ready.

Remove 3 cups of soup, set aside.  Hand blend soup left in Instant Pot.

Place 3 cups of soup back into instant pot.  Stir well and let cool.  This will allow soup to thicken.  It tastes even better the next day!

On stove top:  Place all ingredients in a big pot.  Bring to boil and simmer with lid slightly askew until lentils are soft to touch.  Refer back to instant pot directions to continue.

Ingredients

Scale
  • 1 1/2 cups dry green or brown lentils
  • 1 large yellow onion, chopped
  • 3 celery stalks, chopped
  • 2 medium carrots, sliced
  • 2 garlic cloves
  • 1 dry bay leaf
  • 1 teaspoon thyme
  • 3 medium potatoes, chopped (I love Yukon gold) 
  • 2 teaspoons sea salt
  • 1/2 teaspoon of black pepper
  • 10 cups water

This soup can be frozen for up to 3 months.
