MARCH COOKIE OF THE MONTH: CINNAMON-RAISIN COOKIE

This has to be the most guilt-free cookie you will ever enjoy.  No dairy, oil, egg or refined sugar.  You’re probably wondering what’s left … well, all the good stuff!  So, what are you waiting for?  If your family loves cinnamon and raisins, spoil them with this delight.

In a large bowl, beat together almond butter, vanilla and applesauce.

In a small bowl, whisk together sugar, baking soda, salt, cinnamon, cloves and flour.

*Recommend putting coconut sugar in mini blender or through coffee grinder to create the fine texture needed for smooth cookie dough.

Add to mixture in large bowl.  Beat until well blended.  Stir in raisins and pecans.  Place cookie dough in refrigerator for 1 hour.

Preheat oven to 350 F

Remove dough from refrigerator and scoop out 2 tablespoons for each cookie.  Place on lined cookie sheet and bake for 15-20 minutes or until lightly browned around the edges.  Let cool completely before serving.

  • 1 cup raw almond butter
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons unsweetened applesauce
  • *2/3 cup coconut sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • 3 tablespoons gluten-free flour
  • ½ cup raisins
  • ¼ cup pecans, chopped (optional)
