MAY COOKIE OF THE MONTH: DOUBLE CHOCOLATE-MOCHA COOKIES

These soft, rich, chocolate, mocha flavoured cookies will melt in your mouth and leave you grinning from ear to ear.  I love these cookies so much that I make them jumbo size because one regular cookie just isn’t enough!

Preheat oven to 350F

Prepare flaxseed egg:  Combine flaxseed and water.  Stir well and let sit for 15 minutes to gel.

1.  Mix flour, instant coffee, cacao, baking soda, baking powder, salt and sugars in bowl.  Set aside.

2.  Beat butter, vanilla, flaxseed egg and milk until creamy.

3. Stir in dry ingredients.  Add chocolate chips.

4.  Drop 2 heaping tablespoons of dough for each cookie onto lined baking sheet.  Press and shape into round cookies.

Bake for 12 – 14 minutes for jumbo size (4” cookies).  Reduce time for smaller cookies.

  • 1 flaxseed egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • ¾ cup vegan butter
  • 1 teaspoon vanilla
  • ¼ cup plant-based milk
  • 1 ½ cups gluten-free flour
  • 2 tablespoons instant coffee
  • ¼ cup organic cacao powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup packed organic brown sugar
  • ½ cup coconut sugar
  • 1 cup dairy-free chocolate chips
