This is the ultimate cookie to make with the kids. The dough is so simple to put together and your kids will love choosing the toppings. You can create smaller personalized pizza cookies and each child can chose their own toppings. This could even double as a birthday cake as it serves well with ice cream. Preheat oven 375F
In a small bowl, whisk flour, baking soda and salt, set aside.
In a large bowl beat together, butter, sugar and brown sugar until creamy. Beat in aquafaba and vanilla. Gradually beat in flour mixture.
Stir in ¾ cup of the chocolate chips.
Spread batter in a lined 14” pizza pan. I placed my hand in a small plastic baggie, this helped to push and spread the batter around the pizza pan.
Be careful spread the cookie dough evenly. Bake for 20 minutes, or until the edges are nicely browned.
When the pizza cookie is done baking, heat up ½ cup of chocolate chips and nut butter in the microwave until chocolate is melted. Stir well. Spread over the pizza and add toppings. Serve warm.
This would be fun with a scoop of ice cream!

Ingredients
- 1 ½ cups of gluten-free flour (I used cassava)
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup + 2 tablespoons vegan butter
- ½ cup organic raw sugar
- ½ cup organic brown sugar, packed firmly
- 3 tablespoons aquafaba
- ½ teaspoon pure vanilla extract
- ¾ cup + ½ dairy-free chocolate mini chips
- ¼ cup any nut butter
Vegan and Gluten-free Topping (see notes below) – there are many out there, but I strongly recommend doing your homework!
