MEDITERRANEAN VEGAN PÂTÉ

I have to admit one of the treats I miss with a great glass of wine is a good pâté.  Everyone needs a pâté recipe in their repertoire!  It’s so easy to whip up when guests are on their way or when you just feel like pampering yourself.  Sounds great, right?  This pâté is the perfect combination of salty and nutty with hints of garlic and cheese.  Spreads so easily and really resembles and tastes like a pâté.  Serve with my Vegan Parmesan Crackers or Goodness Crackers.  You can’t go wrong … it’s a real crowd pleaser.

Combine all ingredients in mini food processor.

Mix until well blended.

Scoop pâté into a small bowl lined with plastic wrap and refrigerate for 2 hours.  Invert pate bowl over serving tray and peel off wrap.

Voilà!  Looks beautiful and tastes even better!

Ingredients

Scale
  • 1/3 cup  green or brown lentils, cooked
  • ¼ cup packed sun-dried tomatoes in oil, chopped
  • 1 garlic clove, crushed
  • 2 tablespoons black olives, chopped
  • ½ small onion, chopped finely
  • 1 teaspoon dried thyme
  • 1 teaspoon lemon, freshly squeezed
  • 2 tablespoons walnuts, chopped

Instructions

  1. Combine all ingredients in mini food processor and mix until well blended.
  2. Scoop pâté into a small bowl lined with plastic wrap and refrigerate for 2 hours.
  3. Invert pâté bowl over serving tray and peel off wrap.
  4.  Voila!  Looks beautiful and tastes even better!

Notes

Pâté will keep for a week in a well sealed container.

Serve these with VEGAN “PARMESAN” CRACKERS or GOODNESS CRACKERS.
