EASY TOMATO-ZUCCHINI RISOTTO

Who wants an easy recipe that will satisfy the entire family?  Well, take out your pressure cooker because this is it!  So effortless and full of glorious flavours that will leave you wanting more.  Serve this as a main dish with a salad or as an appetizer.

  1.   Push “sauté” button and place avocado oil in Instant Pot with onion.  Sauté until translucent, stirring constantly,   approximately 1 minute.  Add garlic and sauté for another 30 seconds.
  2. Add zucchini, salt, pepper and Italian seasoning.  Stir well and sauté for another 30 seconds.
  3. Add rice, can of tomatoes and broth.  Stir well.  Push cancel button to turn unit off.  Make sure Instant Pot handle is set at          “sealing” and press “pressure cook”.
  4. Push “rice” button (Instant Pot should read 12 minutes).  Use the quick release, remove lid and stir risotto well.
  5. Serve immediately.

  • 2 tablespoons avocado oil
  • 1 small yellow onion, chopped
  • 1 garlic clove, finely chopped
  • 2 baby zucchini, chopped
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon Italian seasoning
  • 1 ½ cups Italian style rice (white Arborio rice)
  • 398 ml can of organic diced tomatoes
  • 3 cups of organic vegetable or mushroom broth

Instructions
