ITALIAN TOMATO BISQUE

You’re probably very confused, right?  How can bisque be Italian?  Well, leave it to this femmina to put some Italian flavour into this soul warming, cozy tomato bisque.  Not to worry, it’s still smooth and creamy and goes well with a grilled cheese sandwich!  This soup can be made on the stovetop, but I love how fast and easy it cooks in the Instant Pot.  The lectins are eliminated as well.  Enjoy!!

Instant Pot:

Press sauté button on Instant Pot and sauté onion in avocado oil until onion appears translucent, approximately 1 minute.  Add garlic and celery and continue to sauté for another minute.

Add tomatoes, parsley, salt, pepper, Italian seasoning, bay leaf and water.  Stir well.  Cancel sauté button and pressure cook for 8 minutes.  Use the quick release.

Remove bay leaf and purée using an immersion blender.  Add the coconut milk and stir well. I like to let the bisque sit for 15 minutes before serving to give the flavours a chance to mature.

Stove Top:

In a medium size pot sauté onion in avocado oil until onion appears translucent, approximately 1 minute.  Add garlic and celery and continue to sauté for another minute.  Add tomatoes, parsley, salt, pepper, Italian seasoning, bay leaf and water.  Stir well.  Let simmer on lowest heat for 20 minutes with lid partially on.  Stir occasionally.  Remove bay leaf and purée using an immersion blender.  Add coconut milk and stir well.

I like to let the bisque sit for 15 minutes before serving to give the flavours a chance to mature.

Ingredients

  • 1 tablespoon avocado oil
  • 1 medium yellow onion, chopped finely
  • 3 garlic cloves, chopped finely
  • 1 large celery stalk, chopped finely
  • 2796 ml cans of peeled organic tomatoes (love the Mutti Brand) https://www.mutti-parma.com/can-en/products/peeled-tomatoes/whole-peleed-tomatoes
  • 1 tablespoon + 1 teaspoon fresh Italian parsley, chopped finely
  • 2 teaspoons salt
  • 1 teaspoon pepper (less if prefer mild)
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • ¼ cup water
  • 1 cup full fat coconut milk (from can)

 


Instructions

Instant Pot:
