SUPER EASY LENTIL STEW

There are some dishes that I have affectionately called “make it now and eat it later” and the Super Easy Lentil Stew definitely falls under that category.  It is so quick and easy to put together, especially when using the instant pot option and it’s made in one pot.  That’s right, there is hardly any clean up at all!  It freezes well and will be there waiting for you when you need it.

We all have days we come home from work completely exhausted with no energy to even think about putting together a meal for our family, right?  No need to give it any thought, grab this stew from your freezer and warm it up in the microwave or oven.  That’s why I call it the “make it now and eat it later” dish.   Serve with rice on the side and you have a complete wholesome meal packed with lots of fibre and protein.

Instant Pot Option:

Press sauté and heat the avocado oil in Instant Pot.  Sauté onions for approximately 3 minutes.

Add pepper, celery, garlic and chili powder and sauté for another minute.  Cancel sauté.

Add rest of ingredients and stir well.   Secure lid on instant pot making sure it’s on seal.  Pressure cook for 15 minutes.  Use quick release option.

Stir well and let sit for 10 -15 minutes before serving.

Stovetop Option:

Heat the avocado oil in a medium pot over medium heat.  Add onions and sauté for approximately 3 minutes. Add pepper, celery, garlic and chili powder and sauté for another minute.  Add lentils, broth, water, strained tomatoes, tomato paste and hot sauce.  Bring to boil.  Reduce heat and add Worcestershire sauce and salt.  Keep the pot partially covered.  Taste for salt and spiciness.  May need to add water near end of cooking process.

Test to make sure lentils are cooked by squeezing lentils, should be soft. Turn off heat and let sit for 10 – 15 minutes before serving.

Ingredients

  • 1 tablespoon avocado oil
  • 1 medium onion, chopped
  • 1 yellow or red pepper, chopped
  • 3 celery stalks, chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon chili powder
  • 1 cup dried green or brown lentils, washed
  • 3 cups organic vegetable broth
  • 1 cup water
  • 1700 ml jar organic strained tomatoes
  • 3 tablespoons organic tomato paste
  • 1 teaspoon sriracha hot sauce
  • 2 teaspoons vegan Worcestershire sauce
  • 1 teaspoon salt

 


Instructions

Instant Pot Option:

Can freeze up to 3 months.
