FEBRUARY’S COOKIE OF THE MONTH: BE MINE TEDDY BEAR COOKIES

 

My father never remembered anyone’s birthday but when Valentine’s Day came around, he was all over it!   You could always count on Dad to come home with a large heart shaped box of chocolates for my mother and 2 smaller ones for my sister and me.  You could say my father was a die-hard romantic.  I miss him oh so much.  This cookie is for him and all the wonderful memories he left us.

In a large bowl beat together butter, sugar and vanilla until light and fluffy.  Add aquafaba and beat well.

In a separate bowl, whisk together flour, cocoa, baking soda and salt.  Gradually add dry ingredients to wet ingredients.  Blend well.  Refrigerate dough for about 15 minutes.  Dough will become firm and easier to handle.

Preheat oven to 350 F

For each cookie: (place on lined cookie sheet)

Roll 1 – 1 ½ inch ball for the base of the teddy bear, 1 – 1 inch ball for the head and 4-½ inch balls for the arms and legs.  Roll a very tiny ball for the nose.  It is very important when assembling teddy bears to overlap all the parts in order for the dough to stick together when baking.  I press the tummy of the bear down to expand the base and give more shape.

Use a toothpick to make eyes and if you like, form a smile.  Bake cookies for 6 – 8 minutes. Allow to completely cool before handling.

I used a pretty ribbon and tied a tag with a message around each teddy bear’s neck.  Don’t they just make you smile?!!!

  • 2/3 cup vegan butter
  • 1 cup organic sugar
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons aquafaba
  • 2 ½ cups gluten free flour
  • ½ cup premium cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Notes

*These teddy bear cookies are great to make for bridal or baby showers.  Attach a thank you or appropriate message to each cookie.  Try not to eat the dough when you’re making them.  (I think I devoured an entire teddy bear family!!)  Have fun with this one!
