ROASTED GARLIC DRESSING OR DIP

I love making my own dressings and dips.  Quick, simple and there is a comfort in knowing that all the ingredients are vegan, gluten-free and non-GMO.  Hurray!

If you are in love with garlic as much as I am this dressing is a perfect match for you.  The roasted garlic gives a sweetness to the dressing so it’s not too overpowering.  It’s a great addition to any salad or sandwich.  You can enjoy it as a dip as well or use it as a drizzle over any power bowl.  So good!

Preheat oven:  400 F

Roasted garlic – Cut off top of garlic head and place in tin foil.  Drizzle olive oil over cut garlic head and seal tin foil.  Place on oven rack and bake for 40 minutes.  Remove from oven and open tin foil allowing garlic head to cool off.  Squeeze garlic cloves out of head into small bowl.  Mash baked garlic with fork until smooth.

Add rest of ingredients and combine until smooth.  Place in refrigerator overnight or 4 – 6 hours before using.

  • 1 teaspoon Dijon mustard
  • 1 teaspoon vegan Worcestershire sauce
  • 1 tablespoon white vinegar
  • ½ teaspoon salt
  • ¼ teaspoon pepper
