SEPTEMBER COOKIE: RAISIN AND SPICE AND EVERYTHING NICE

September cookie will leave your kitchen smelling like fall is on its way with the glorious aroma of cinnamon and nutmeg.  It’s crispy on the outside, chewy inside and full of raisin and pecan treasures.  You can’t possibly have just one.  Curl up in your favourite chair and enjoy them with coffee or tea.  Such a satisfying, sweet treat.  Happy Fall!

Preheat oven 350F

Prepare flaxseed eggs by mixing ground flaxseed and water.  Let sit for 15 minutes to gel.  Beat butter and sugars until fluffy.  Add vanilla and flaxseed eggs and stir until combined.  Set aside.

In separate bowl, whisk all dry ingredients together.  Add dry ingredients, raisins and pecans to wet ingredients.  Mix until well combined.

Scoop 2 large tablespoons of dough per cookie onto lined cookie sheet.  Use hands to shape into round cookies.   Bake for 12 – 14 minutes or until lightly golden brown around the edges.

Cool on wire rack before indulging, if you can wait that long!
