THE OMG BERRY CRUMBLE

You may think I’m exaggerating when I tell you I have enjoyed many crumbles, but this one literally made me say, “OMG!”  I love the combination of the super fruit blend and the wild blueberries as it gives this crumble its ultimate flavour.  The fruit blend is sandwiched between a top and bottom oat crumble.  Give yourself the full guilty pleasure and add a big scoop of vanilla ice cream to melt over this fruity masterpiece.

I would never use frozen fruit to make any pie as it would just be a soupy gooey mess, but trust me, with this crumble you will love the hot mess!  I didn’t add any cornstarch or sugar to the berries as it is not needed.  The berries are so sweet and lovely on their own and their juices trickle into the oat mixture to deliver an awesome taste experience.  You can add a teaspoon of lemon if you like, but I didn’t feel the need.

I usually enjoy this as a dessert, but I must confess I have warmed it up for breakfast as well.  Why not start the day with an OMG breakfast!

Preheat oven 375F

Sift flour, baking soda and salt into large bowl.

Cut in butter and combine until crumble forms.  Add sugar and oats and blend well.

I use my hands and work the butter mixture into the oats.

Press half of the mixture into a 9”pie plate or a 9” x 9” pan.

Cover with berries and top evenly with rest of crumble.

Sprinkle cinnamon over crumble.

Place pan on cookie sheet to catch any possible drippings from the berries.

Cover pan with foil and bake for approximately 1 hour.

  • 1 cup gluten-free flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup vegan butter
  • 1/2 cup organic brown sugar, packed
  • 2 cups gluten-free rolled oats
  • 1 package (600 grams) or 5 cups of frozen super fruit blend (dark sweet cherries, blueberries and blackberries)
  • 1 cup frozen wild blueberries
  • ½ teaspoon cinnamon
