THE SINFUL SMASH-UP

I love this dish because it incorporates 3 of my favourite recipes into one!  It’s bursting with so many flavours and the smashed potatoes are the hidden surprise.

Serve this with a salad or make it a Mexican dish and serve with sour cream and guacamole with a side of corn chips.  That’s the beauty of this dish, you can dress it up anyway you want.

 

Prepare potatoes:

Place potatoes, oil, salt, pepper, dried basil and garlic powder in bowl and toss until potatoes are well coated with seasoning.

Transfer potatoes to lined cookie sheet and bake for 20 minutes or until fork tender.

Using a tenderizer or bottom of cup, smash each potato and place back in oven for another 15 minutes.

While potatoes are baking:   Prepare gravy and cheese sauce. I have yummy recipes for both just click on the link provided!!!

Set aside.

Assembly 

Place prepared potatoes on a large serving dish.  Pour miso gravy over potatoes and spoon the veggie ground over the gravy and potatoes.  Add chosen vegetables.  Drizzle cheese sauce over everything.  Sprinkle parsley for garnish.  Delish!

Ingredients

To prepare potatoes you will need:

  • 1.5 lbs. pkg. (~ 40 potatoes) Golden Little Gems Potatoes (baby potatoes)
  • 1 tablespoon avocado oil
  • ¼ teaspoon each salt, pepper, dried basil, garlic powder

You will also need:

  • Miso Gravy:  get recipe here. 
  • Vegan Cheese Sauce:  get recipe here.
  • 1 ½ cups Veggie Ground:   get recipe here. (you will need to prepare this ahead)
  • Choose your vegetables:  I chose chopped tomatoes, yellow onions and green onions. Chopped Italian parsley for garnish

To prepare veggie ground you will need:

  • 1 ½ cups Veggie Ground
  • 2 teaspoons chili powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1/8 teaspoon red pepper flakes (or more if you like it spicier)
  • ¼ teaspoon oregano
  • ¼ teaspoon salt
  • Pinch of pepper
  • 1 teaspoon arrowroot powder

Instructions

Prepare potatoes:

Place potatoes, oil, salt, pepper, dried basil and garlic powder in bowl and toss until potatoes are well coated with seasoning.

Transfer potatoes to lined cookie sheet and bake for 20 minutes or until fork tender.

Using a tenderizer or bottom of cup, smash each potato and place back in oven for another 15 minutes.

While potatoes are baking

  1. Prepare gravy and cheese sauce.  Set aside.
  2. Prepare veggie ground.  Set aside.

Assembly:

  1. Heat up prepared veggie ground in microwave for 2 minutes.
  2. Place prepared potatoes on a large serving dish.
  3. Pour miso gravy over potatoes and spoon the veggie ground over the gravy and potatoes.
  4. Add chosen vegetables.
  5. Drizzle cheese sauce over everything.
  6. Sprinkle parsley for garnish.  Delish!

Notes

I always have prepared veggie ground in my freezer ready for any recipe!

Serve this with Classic Guacamole recipe.
