Gourmet pizza takes the pizza experience to a whole new level. If you love pesto and a thin crust this pizza is calling your name. No fussing with making your own dough from scratch as Bob’s Red Mill mix does a fabulous job with the gluten-free vegan version. Some tweaking was made for the baking process to earn the name, The Ultimate Gourmet Pizza. It’s so delicious your family and friends won’t even notice the missing cheese. Yes, it’s that good! I love serving this with my Ultimate Caesar Salad and, of course, a good vegan wine. Now that’s the perfect night!!
Tools needed:
Prepare the pesto sauce. Refrigerate.
Prepare flaxseed eggs. Mix the ground flaxseed and water together and let sit for 15 minutes to gel.
Preheat oven 425F
Place pizza stone in center rack.
Prepare Bob’s Red Mill pizza mix as per instructions using the flaxseed egg option.
Divide the pizza dough into 2 balls to make 2 – 12“pizzas. Sprinkle with flour.
Roll out first ball of dough on parchment paper into approximately a 12” round pizza. Don’t worry about the edges looking perfectly round. This gourmet pizza style looks better with rough edges.
Place rolled out dough with the parchment paper onto the heated pizza stone. Bake for 5 minutes. Remove the parchment paper by carefully sliding it out from underneath the crust. Bake for another 3 minutes. Edges will be golden brown.
Remove crust from oven using the pizza spatula and spread pesto sauce evenly. Add toppings and sprinkle with salt and pepper.
Place back in oven for 12 minutes. Edges will be dark brown.
Slice pizza immediately and enjoy!
Repeat for 2nd pizza.
